Banana Bread
Banana Bread:

Cook time: 50 minutes
Ingredients:
- 1 ¾ cup (193 g) Grain Free Flour Mix, loosely spooned into measuring cup and levelled off
- 1 ½ tsp ground cinnamon
- 1 tsp baking soda
- ½ tsp sea salt
- 3 over ripened bananas, plus an additional banana for decoration
- 3 eggs
- ½ cup extra virgin olive oil
- ¼ cup honey
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
Method:
- Preheat oven to 180 degrees Celsius (non-fan forced).
- Line a loaf tin with parchment paper.
- In a medium mixing bowl combine Grain Free Flour Mix, cinnamon, baking soda and salt and stir well.
- In a separate bowl, add extra virgin olive oil, honey, apple cider vinegar, vanilla extract, and eggs. Beat the wet ingredients using an electric mixer or by hand until well combined and slightly aerated.
- Add the wet ingredients to the dry ingredients and mix gently until combined.
- Peel and mash the bananas before folding into the batter.
- Pour the batter into the prepared loaf tin.
- Thinly slice a banana lengthways and assemble on top of cake.
- Mix coconut sugar and extra virgin olive oil to form a paste and lightly brush over the top of bananas.
- Place the tin in the middle of oven and cook for 50 minutes or until a skewer comes out clean.
- Remove from oven and gently lift the cake out of the tin and onto a wire rack to cool before slicing.
TIP: This banana loaf freezes well. If freezing, cut loaf into slices prior to freezing and place into a freezer safe container or sandwich bag.
