Banana Pancakes
Banana Pancakes:

Cook time: 15 minutes
Ingredients:
- ¾ cup (85 g) Grain Free Flour Mix, loosely spooned into measuring cup and levelled off
- 1 tbsp coconut sugar
- ½ tsp bicarb soda
- 2 ripened bananas, cut into pieces
- 2 eggs
- 2 tbsp extra virgin olive oil
- 2 tbsp non-dairy milk (e.g. coconut or almond)
- 1 tbsp coconut oil, for frying plus extra if needed
- 2 tsp apple cider vinegar
- 1 tsp vanilla extract
- Optional: 2 tsp maca powder
Method:
- Preheat a large frying pan on medium heat (if using stainless steel, allow the pan to heat until non-stick - search Leidenfrost effect) and lightly grease with coconut oil.
- Add all ingredients to a blender (excluding coconut oil for frying) and blend until smooth. Alternatively, you may add ingredients to a jug and use a stick blender.
- Just prior to cooking pancakes, turn down the stove-top to low.
- Pour ¼ cup of batter into centre of frying pan. Allow the pancake to cook until bubbles begin to form on the surface. Once bubbles begin to pop, flip pancake over and cook on the other side until cooked through.
- Repeat until entire batter is used up.
- Serve pancakes with desired toppings.
