Crepes

Crepes (Makes 10 crepes):

Prep time: 5 minutes

Cook time: 25 minutes

Ingredients:

  • 1/3 cup (37 g) Grain Free Flour Mix, loosely spooned into measuring cup and levelled off
  • 1/8 tsp fine sea salt
  • 3 large eggs
  • ½ cup coconut milk or non-dairy alternative, carton or canned
  • 2 tbsp extra virgin olive oil
  • 2 tbsp pure maple syrup
  • 1 tsp vanilla extract

Method:

  1. Preheat a large frying pan on medium heat (if using stainless steel, allow the pan to heat until non-stick) and lightly grease with coconut oil.
  2. In a small bowl combine Grain Free Flour Mix and salt, stirring to combine.
  3. In a separate medium bowl, whisk together the eggs, coconut milk, extra virgin olive oil, maple syrup, and vanilla.
  4. Sift the dry ingredients into the bowl of wet ingredients, mixing vigorously until no lumps remain.
  5. Turn the heat on the stove down slightly. Pour ¼ cup of batter into the preheated pan. Grab the pan by the handle and rotate it to spread the batter across the bottom of the pan.
  6. Let the crepe cook for 30-seconds to 1-minute (it will cook quickly due to being quite thin).
  7. Flip the crepe over and cook it on the other side until slightly browned.
  8. Remove the crepe from the pan and continue until batter is finished.
  9. Assemble the crepes as desired and serve with your toppings of choice.

TIP: If the crepes are over-browning, turn the stove-top down to low.
