Sweet potato Gnocchi
Sweet potato Gnocchi (Two-ways- Serves 2 mains):
Prep time: 30-40 minutes
Cook time: 1 minute
Ingredients:
- 2 cups of peeled and chopped sweet potato (e.g., orange, or purple skin/white inside) to yield 1 cup of sweet potato puree
- 1 ½ cup (165 g) Grain Free Flour Mix, loosely spooned into measuring cup and levelled off (plus up to ¼ cup more if required)
- 1 tsp fine sea salt
- 1/3 cup filtered water
Method:
- Peel and cut sweet potato into medium sized cubes and add to a steamer. Steam until fork tender. Add to a blender and puree until smooth.
- In a large bowl, add sweet potato puree, Grain Free Flour Mix and salt, mixing to combine.
- Add water and mix ingredients together using a spoon. Continue to form dough with hands until a smooth, pliable dough is achieved. If the dough feels sticky, add 1 tbsp of Grain Free Flour at a time until the dough is no longer sticky. Conversely, if the dough is too dry, add 1 tbsp of water at a time until the dough becomes smooth.
- Roll the dough into a ball. Cut the dough into 6 pieces using a knife.
- On a clean surface, roll each piece of dough into a log, 1-cm thick.
- Cut along the log 2-cm long pieces and repeat with remaining dough.
- Roll each gnocchi piece along a gnocchi board to form grooves or alternatively use a fork.
- Bring a large pot of salted water to the boil and cook gnocchi for 60 seconds or until pieces float to the top.
- Remove gnocchi from the boiling water using a slotted spoon. Add gnocchi to a plate and top with sauce/garnishes of choice.
